The classic version of making dumplings with nettle in Dagestan is the most common and simple recipe. It requires a minimum of ingredients.

Filling products:

  • chopped nettle - 500 g;
  • large onion - 2 pcs.;
  • sunflower oil and butter - 1 tbsp. l.
  • egg - 2 pcs.

Preparation:

  1. The onions are chopped.
  2. Oil is added to the pan, the onion is poured.
  3. Fry until dark yellow.
  4. Eggs, onions are added to the green mass, mixed.

The filling is ready. The dough is kneaded from the following components:

  • flour - 1 kg;
  • water - 250-300 ml;
  • sunflower oil - 3 tbsp. l .;
  • egg - 1 pc.;
  • salt - 1 tsp

Cooking process:

  1. The flour is sifted through a sieve into a wide bowl.
  2. A small depression is made in the center.
  3. Add salt.
  4. Break the egg into water, beat.
  5. Pour the liquid into the flour and add the oil.
  6. Knead well on a flat, floured surface.
  7. Put the dough in a bag, tie and leave for 20-30 minutes. in the fridge.
  8. The cooled mass is mixed again.
  9. Cut off a piece and roll out a long thin cylinder.
  10. Divide the workpiece into equal small parts.
  11. Roll out the cakes.
  12. Place the filling in the center with a spoon so that there is free dough for pinching with a pigtail.
  13. Put a pot of salted water on a fire. The dumplings are dipped in boiling liquid and cooked for 7 minutes.

Serve hot with butter or sour cream

Fresh nettle dumplings with nuts

You can make dumplings with nettle and walnuts, they are not inferior to meat in taste, but the nutritional value is much higher.

Filling:

  • walnut kernels - 250 g;
  • onions - 3 pcs.;
  • chopped nettle - 300 g;
  • garlic - 4 cloves;
  • salt and pepper to taste;
  • ghee - 2 tbsp l. (can be replaced with vegetable);
  • egg - 2 pcs.

Preparation of filling for dumplings:

  1. Finely chop the onion and fry in oil until yellow.
  2. Garlic is crushed.
  3. The nuts are chopped with a blender or meat grinder.
  4. Eggs, garlic and fried onions are added to the nettle mass.
  5. All mix, salt and pepper to taste.

Set aside the filling for the dumplings and knead the dough. Required Ingredients:

  • flour - 500 g;
  • water - 150 ml;
  • egg - 1 pc.;
  • salt - 1 tsp

Knead the dough. Leave it in a bag in the refrigerator for 15 minutes. Then mix again. In 10 minutes. You can mold dumplings discs. Put the filling in the center of each cake, pinch the edges. Can be made in the form of a traditional dumplings or dumplings. Kurze is cooked in salted water.

For cooking, you can take ready-made dough (300 g) or make it yourself:

  • flour - 250 g;
  • water - 70 ml;
  • egg - 2 pcs.;
  • salt - ½ tsp.

The finished dough is wrapped in plastic wrap and left for 20 minutes, then mixed again. They are molded in the form of discs, the size of which is slightly larger than for ordinary dumplings.

Filling:

  • nettle - 150 g;
  • minced pork - 150 g (you can take another one);
  • rendered fat (lard) - 1 tbsp. l .;
  • onions - 2 pcs.;
  • pepper, salt to taste.

Preparation:

  1. Boil the nettle in salted water for 10 minutes.
  2. To get rid of the water, they are thrown into a colander.
  3. The onions are finely chopped and sautéed in pork fat until golden brown.
  4. Mix green mass and onions, taste for salt, pepper.
  5. Add minced meat to the nettle, mix.

The dough is rolled out into a thin disk and cut into circles. They sculpt kurze. Cook in salted water for 10 minutes.

Dumplings are served with sour cream and ghee or replaced with garlic sour cream sauce

Kurze with nettles and cottage cheese

The dough is made in the traditional way, without adding eggs. The mass must be well mixed and kept in the refrigerator for at least 30 minutes. You can prepare nettle kurze with the addition of cottage cheese. For the recipe you will need:

  • nettle - 300 g;
  • egg - 2 pcs.;
  • cottage cheese - 200 g;
  • vegetable oil or ghee - 2 tbsp. l .;
  • salt, pepper - to taste.

Preparation of the filling:

  1. Finely chop the onion, put in a frying pan with oil, and stand until soft.
  2. The blank from the plant is added to the pan. Stew together with onions, stirring constantly, no longer than five minutes.
  3. At the end of the process, salt is added, pepper is added.
  4. Place in a bowl and let cool completely.
  5. Eggs and cottage cheese are added.

Knead the dough, sculpt dumplings of any convenient shape. Salted water is allowed to boil, kurze is placed, boiled for 7-10 minutes. According to the recipe, you can prepare a semi-finished product in large quantities and place it in the freezer.
